PROPIEDADES FISICOQUÍMICAS Y ACTIVIDAD ANTIOXIDANTE EN FRUTOS DE JABOTICABA (Myrciaria cauliflora (Mart.) O. Berg.) EN DIFERENTES ETAPAS DE MADURACIÓN

Resumen

Se cosecharon frutos de jaboticaba (Myrciaria cauliflora (Mart.) O. Berg) en tres etapas de maduración: verde, cambiante y maduros, provenientes de una huerta comercial en Yautepec, Morelos, México. En cada etapa de maduración se evaluaron parámetros de calidad, metabolitos funcionales y la actividad antioxidante por tres métodos. La masa de los frutos varió entre 6.8 y 12.2 g, sin detectarse diferencias significativas entre etapas de maduración. Los frutos maduros mostraron color rojo opaco (h=29.0, L*=29.6 y C*=8.6), mientras que los frutos verdes tuvieron un color verde con opacidad intermedia (h=103.1, C*=30.5, L*=48.3). El contenido de sólidos solubles fue significativamente mayor en la fase madura (12.2 °Brix) en tanto que la acidez titulable mostró los valores menores (0.8 %), el índice de sabor fue mayor en la fase madura (22.5). El contenido de fenoles totales y actividad antioxidante por el método de DPPH y FRAP fue mayor en la fase verde y madura, determinándose cierta asociación entre dichas variables (r=0.45*). Los resultados indican buena calidad de los frutos de jaboticaba cultivados en Morelos, México comparados con lo reportado en literatura, además de presentar cantidades mayores de compuestos fenólicos y asociación con la capacidad antioxidante; lo que sugiere puede ser una fuente de metabolitos funcionales en la dieta de quien los consuma en la región.
