Abstract

The aim of this study was to analyze the mineral content in the peel and pulp of Golden Glory apples during their development. Apple samples were taken from a technified orchard at 40, 70, and 130 days after full bloom. An atomic absorption spectrophotometer was used to determine macro and micronutrients. The nitrogen content in the apples was obtained using the Kjeldahl method. Significant differences on the nutritional content of apples at different stages of development were obtained, in pulp and peel. Calcium decreased in both tissues as the fruit developed, with values ranging from 0.06 to 0.17%. An inverse relationship between potassium and magnesium and days after full bloom was obtained; the values of these macronutrients ranged from 0.35 to 0.78% and 0.024 to 0.075%, respectively. Nitrogen values up to 1.03% were obtained in the apple peel. Micronutrients were also influenced by the fruit development time and its tissue, with iron, sodium, and copper being the most accumulated. Mineral analysis is a valuable tool that can help prevent issues affecting apple quality.
